Guilt Free Chocolate Orange Balls


I take great pleasure in making sure guilt-free is put in there. With taking fitness seriously, or trying to cut down on bad habits, the battle with snacking can become genuinely stressful. Let me take that stress away! These balls, can be placed in the fridge or freezer (preferably) for not only keeping them fresh but to maintain shape and texture. They are a go-to grab whenever you like type of snack.


With a timeless chocolate orange taste, these protein balls can be the evidence that a sweet treat is tasty and good for you. And they are GENUINELY sweet! Kids love them and adults can love them with the idea that it's not going straight to the hipline.





Preparation time - 5-7 minutes

Ensure protein balls are placed into freezer for minimum 4 hours.


Equipment and accessories required


  • Cake mixer or food processor

  • Scales

  • Tablespoon measure

  • Teaspoon measure

  • Spatula

  • Large mixing bowl


Ingredients


  • 250g raw pitted dates

  • 50g maple syrup (agave is also fine.)

  • 50g melted coconut oil

  • 1tsp spirulina powder

  • 30g raw cacao nibs

  • 1tbsp seville orange extract

  • 2tbsp freshly squeezed orange juice from one seville orange

  • 60g raw cacao powder

  • 150-200g rice flour


Method


  • Place dates in pre boiled water for 10 minutes to soften (do not cook them over the stove)

  • Once softened, place dates into the mixer along with all the wet ingredients with spirulina and cacao powder

  • Once mixed, decant into large mixing bowl

  • Add rice flour to measure. Consistency of the mixture should be thick and come away from the edges of the bowl.

  • roll balls to desired size - Tip * - the mixture is quite claggy to the hands. Use a little melted coconut oil or water on hands to help with rolling.

  • Roll balls in either cacao powder or cacao nibs (or mix and match.)

  • Place into freezer for minimum 4hours. They will never fully freeze.
